    Who doesn’t love muffins…especially homemade warm from the oven? These pumpkin muffins are not only delicious they are also pretty good for you!  They have LOTS of pure pumpkin (high in fiber, vitamin A and beta carotene), oat bran (fiber) and white whole wheat flour.  Buttermilk, agave syrup and molasses combine to create a very moist muffin…so the recipe requires very little added fat.  I make many versions of this muffin using the same basic recipe, replacing the pumpkin with mashed banana, applesauce or other pureed fruit.  Yummy, easy and guiltless!

    Low Fat Whole Grain Pumpkin Muffins

    servings: 12 Muffins | time: About 35 minutes

    ingredients:

    1 1/4 cup oat bran
    1 cup white whole wheat flour (King Arthur Flour makes a great one!)
    1 tsp. cinnamon
    1/2 tsp. allspice
    1/2 tsp. ginger
    1/4 tsp. nutmeg
    1/4 tsp. cardamon
    1/2 tsp. salt
    2 tsp. baking powder
    1 tsp. baking soda
    1 15-ounce can pumpkin (NOT pie filling).  I use organic
    1 cup buttermilk
    1 egg
    2 Tbsp. walnut oil (can use canola)
    1/3 cup agave syrup (preferably amber)
    1/4 cup molasses
    1 tsp. vanilla

    directions:

    Preheat oven to 350 degrees. Spray a non-stick muffin pan with non-stick spray. Set aside

     

    1. Blend all of the dry ingredients together in a bowl. Set aside

    2. Whisk all the wet  ingredients together  in another (large) bowl until well blended

    3. Add the wet ingredients to the dry.  Blend just until combined….do not over mix!

    4. Using a muffin scoop (0r a 1/3 cup measuring cup) fill each muffin cup 3/4 full

    5. Bake at 350 for 18-22 minutes until a toothpick inserted at the center of a couple of muffins comes out with just a few moist crumbs

    Will keep in the refrigerator for about 4 days (or freeze for up to a month)
