    I have rediscovered tahini (or sesame paste), which hadn’t been a staple in my kitchen….until recently when a newly developed obsession with making homemade hummus had me making a fresh batch every weekend. Once my hummus binge passed, I had to find ways to use the tahini I purchased a little too enthusiastically. On a recent weeknight, after a very long day at work I opened my pantry and perused the products presented and pondered what I could make that would be quick, easy and healthy. The tahini beckoned as it sat patiently next to a package of buckwheat soba noodles. They seemed such a happy and perfect couple I decided that they would be the stars of dinner. 

    The recipe is really simple; a quick and flavorful sauce and a package of organic frozen broccoli and viola…a quick, delicious and healthy dinner. Try adding chicken breast or shrimp for some added protein.

    Sesame Soba Noodles with Tofu and Broccoli
    Total prep / Cooking time: 20 minutes
    Serves 3

    Prepare the sauce:
    1/4 cup tahini (sesame paste)
    1″ nub of ginger, grated
    1 clove garlic, grated
    1 Tbsp. sesame oil
    1 Tbsp. brown rice vinegar
    1 Tbsp. Ponzu sauce (a citrus soy sauce)
    2 tsp. agave syrup
    1/2 tsp. star anise

    Juice of 1/2 a lime
    1/4 cup water or lite coconut milk 
    2 Tbsp. scallions, chopped

    1. Place all of the ingredients in a large bowl and whisk well to combine. Set aside 

    2  tsp. sesame oil
    1 10-ounce package super firm tofu
    2  Cups cooked buckwheat soba noodles
    1 10-ounce bag frozen organic broccoli florets (or 1.5 cups fresh)

    1. Drain the tofu, wrap in a paper towel and allow to sit for a couple of minutes
    2. Remove the paper towel and cube the tofu into 1/2″ pieces
    3. Heat the sesame oil in a non-stick skillet over med-high heat
    4. Add the tofu to the prepared saute pan and allow to brown on one side (about 5 minutes)
    5. Turn tofu and allow to brown on the other side (another 5 minutes)
    6. Meanwhile, cook broccoli until it’s just tender (steam or simmer for about 4-6 minutes). Drain and set aside
    3.Cook soba noodles according to package directions. Drain and set aside
    4. Place the noodles, broccoli, and tofu in a large bowl. Add the sesame sauce and toss to combine. serve hot or at room temperature
