    Green smoothies have become the divas of the growing trend toward healthier eating. What with their organic, leafy green, “superfood” status, it’s hard to look away when they enter a room.

    Because they are beautiful

    …and remarkably delicious. It’s almost miraculous how even the most notoriously bitter green can turn into such a delightful treat when it’s blended with something sweet. It’s like if you took Simon Cowell and combined him with Sandra Bullock…and made them into a smoothie.

    Wait, what? Maybe 5 days of smoothies for breakfast has made me a little….delirious?

    Or maybe I’m just excited at the idea of drinking my greens…and getting them in at breakfast. Talk about getting a jump start on the whole “9 servings of fresh produce a day” recommendation!

    Pinepple, Coconut, Kale Smoothie

    servings: 1 | time: about 5 minutes

    1 cup unsweetened plain coconut water

    3/4 cup frozen pineapple

    1/2 of a medium banana (preferably frozen)

    1/2 cup plan low fat yogurt

    1 TBSP. agave nectar

    3 large leaves of kale, washed well and stems removed



    1. Place all of the ingredients in a blender and puree on high for 203 minutes. Enjoy immediately
