    OK, so day two of Six Days of Seriously Satisfying Smoothies and we’re getting a little creative.

    Now, if you’ve never used avocado in a recipe that didn’t include tortilla chips, this one may send you for a little loop. But, here’s the thing…turns out avocado is simply sublime in more sweet preparations.

    Did I just use the word sublime?

    Well, there’s just no other way to put it. The rich, creamy texture of avocado creates an amazingly velvety, decadent smoothie with the perfect consistency. Not too thick (we’re not making milkshakes here) and not too thin (we’re not making supermodels here). Plus, the (good-for-you) fat helps to keep you feeling satiated until lunch.

    The coconut water base combined with pineapple, mint and lime makes this one feel tropical (a welcomed reprieve from the bone-chilling temps most of us have been suffering for the last several days).

    One thing I forgot to mention in my first Six Days of Seriously Satisfying Smoothies post yesterday, if you’re feeling like you need more protein, go ahead an add a scoop of your favorite protein powder (I do on the days I work out).

    Pineapple, Avocado, Mint and Lime Smoothie

    servings: 1 | time: about 5 minutes

    1 cup plain coconut water

    3/4 cup frozen pineapple chunks

    1/4 of a large avocado

    1 tsp. lime juice

    6 fresh medium-sized mint leaves

    1 TBSP. agave nectar




    1. Place all of the ingredients in a blender and puree for about 2 minutes. Drink immediately

    1. Wow, this looks wonderful! MauiJim loves avocados and always buys a big bag at Costco, which he then doesn’t eat. So this is a perfect way to use them. But coconut water? Not sure where to get that except for buying a whole coconut? Love your blog. Keep the great posts coming. πŸ™‚

    2. Coconut water is super easy to find as it’s become one of the sweethearts of the ‘healthy’ beverage movement. You should be able to find it in the beverage aisle of any grocer and certainly at Whole Foods, Trader Joes (great prices on it there), etc. I personally don’t like it plain, but it’s great in a smoothie (particularly after a workout).       This sounds so good! Wish I’d seen it before my shopping for the week. @Susan you can freeze avocados and then toss them in the smoothie that way. Super plan if you have more than you can use. I just scoop out into serving sizes and put them in ziploc bags in the freezer. They blend up just fine without thawing first. πŸ™‚

      Just had this! Except for coconut water (which I didn’t have), used orange juice. Also, threw in a piece of ginger. It was YUM!
