    Here it is, the final installment of my healthy holidays appetizer blitz. These bite-sized little morsels are simple and quick to make and with the healthy twist of adding cottage cheese to the mix, they are light while still feeling festive. See, there’s no reason to feel like you’re giving up anything when you’re trying to eat with more intention around the holidays.

    Goat and Cottage Cheese Cheeseballs

    {Healthy Holidays} Goat and Cottage Cheese Appetizer

    servings: about 12 mini cheese balls | time: 1 hour 20 minutes (including time to chill)

    4 Ounces goat cheese

    1/2 cup low fat cottage cheese

    1 – 2 tsp honey (to taste)

    2 TBSP. sweet paprika

    1/3 cup dried cranberries, chopped

    1/3 cup chopped walnuts or pecans

    1/4 cup chopped assorted herbs of choice (dill, chives, and thyme are all good choices)

    1 tsp. grated lemon peel


    1. Place the goat and cottage cheeses in a bowl. Mash together with a fork until well combined
    2. Add the honey, one teaspoon at a time. Blend well to combine and taste for desired sweetness
    3. Place the sweet paprika, dried cranberries, chopped nuts and chopped herbs in 4 separate bowls
    4. Add the lemon peel to the chopped herbs and toss to combine
    5. Form mini cheese balls using about 1 teaspoon of cheese for each portion. Place the cheese ball in one of the toppings and gently roll to cover (the cranberries are tricky, you’ll need to gently press them into the cheese to get them to stick)
    6. Refrigerate for at least one hour (they can be made a day ahead). Store in an air tight container in the fridge
