  • A Healthy Kick Off to Summer!

    Am I the only one who never wants to hear the words “polar” and “vortex” uttered again in the same sentence? I mean, unless Robert Downey Jr. says it in some apocalyptic end-of-the-world disaster movie…then, well…Ok (mainly because he’s RDJ and basically anything he says makes me want to come along for the ride).

    Depending on where you live, the winter was one for the ages. Even the hardiest among us was ready to hang up the skis (and snow boots, and scarfs, and hats, and shovels….) and dig out our shorts and flip flops. So, all of this anticipation for summer, ushered in by the upcoming Memorial Day Weekend (note: let’s not forget what the weekend is really about), has me thinking about healthy cookout fare. It’s no coincidence that warmer weather makes us crave lighter foods, so really, we’re already half way to a healthy celebration (potato salad and ice cream sundaes aside). So, after perusing all of the recipes you’ll find here, I collected a handful that I think will make tasty additions to your celebration.

    First up, Mediterranean Quinoa Salad.


    This super simple dish is a tasty side and is a great option to have on-hand for vegetarian guests. The abundance of fresh herbs and vegetables are a great reintroduction into the season of salads.

    Next up, Greek-Inspired Chicken Kabobs. 


    Who brought the killer kabobs? You did! These are sure to be a welcomed addition to the cookout spread…especially the tangy homemade Tzatziki Sauce, which would be equally tasty on a burger or grilled fish.

    Feeling like a main-course salad is in order? This Shrimp, Avocado and Orange Salad is always a show stopper. It’s so beautiful and is a surprisingly hearty meal.

    Wow….as an aside, I can’t help but notice how much my photography skills have improved over the last year. Go me! 🙂

    What cookout doesn’t have juicy burgers on tap? Certainly not this one! These Brie and Apple Turkey Burgers are très fancy for the first official cookout of the season.


    Never fear, dessert is a MUST, so what do you say we go with Summer Berry Yogurt Parfaits? A blend of vanilla low fat yogurt and just enough whipped cream to make it feel a little special (and way more indulgent than it really is), makes this the perfect ending to a healthy cookout.
