    Nothing better than whipping up a simple vegetarian taco. My favorite part–the yummy cilantro pesto. Though it’s an acquired taste, we cilantro junkies really can’t get enough of the stuff. It’s also tasty on eggs, mixed with a little vinegar and additional lime juice for salad and tossed with black beans, corn, jalapeno, peppers, onion and avocado for salsa. …I should probably stop there….I seem to be edging a little too close to a Bubba Gump Shrimp moment….

    Quick Bean Tacos with Spicy Yogurt Sauce

    Fit Fab Fresh Take on Takeout: Quick Bean Tacos with Spicy Yogurt Sauce (Gluten Free)

    For the Spicy Yogurt Sauce:

    1/3 cup fat free Greek yogurt
    1/4 tsp. ground cumin
    1/4 tsp. garlic powder
    2 TBSP. chopped fresh cilantro
    a few dashes of hot sauce (to your liking)
    Juice of 1/2 a lime
    1 TBSP. extra virgin olive oil
    pinch each of salt and pepper


    For the Cilantro Pesto:

    1 cup fresh cilantro, packed loosely
    2 small cloves garlic
    1/3 cup toasted pumpkin seeds
    Generous pinch of salt
    Juice of 1 lime
    Up to 1/3 cup extra virgin olive oil


    For the Filling and Taco Assembly:

    1 TBSP. olive oil
    1 can no-salt added white or cannellini beans, drained and rinsed
    1 cup chopped tomatoes
    1/4 cup cilantro pesto
    4 organic corn tortillas
    1/4 cup reduced-fat shredded Mexican blend cheese
    1/2 cup chopped lettuce
    1/4 cup spicy yogurt sauce


    For the Yogurt Sauce:
    Add all of the ingredients in a bowl and stir to combine. Set aside while you make the pesto and beans


    For the Pesto:
    Place the cilantro, garlic, pumpkin seeds, salt and lime juice in a food processor. Pulse a few times on high until well combined. Turn the food processor on low and slowly drizzle the olive oil in until the mixture resembles a traditional pesto. Set aside while you make the beans


    For the Filling and Assembly:

    1. Heat the olive oil in a cast iron skillet or non stick pan

    2. Add the beans and saute for 5 minutes (add a pinch of salt if you’re using unsalted beans)

    3. Add the chopped tomatoes and saute for 3-4 minutes

    4. Add the cilantro pesto and saute for 1 minute. Remove from heat

    5. Warm the tortillas in the microwave for a few second (or wrapped in foil in a 350 degree oven for 7 or 8 minutes)

    6. Assemble the taco by sprinkling some cheese on each tortilla. Top with shredded lettuce, bean filling, and spicy yogurt sauce. Sprinkle with some fresh cilantro and serve with a wedge of lime
