    Raise your hand if you love a good burger. 

    Now raise your hand if you’re one of the growing number of people who have cut back on or given up beef.

    …raise your hand if you miss a good, juicy, cheesy burger.

    I thought so. 

    I gave up beef many years ago and, frankly, since I was never a big fan, I haven’t really missed it. But I know that many of you do. 

    Now, I do love a good burger–it’s one of the great American comfort foods. So recently when I found myself craving a big, yummy burger I came up with this one.

    This burger is inspired by some of the really tasty chicken-apple sausages that are on the market (if you’ve not tried them put them on your list for your next shop…seriously…they are so good). I started with ground turkey breast (chicken is fine too) and added a few classic herbs that go well with both poultry and apples. A quick saute to an apple and a shallot and a simple Dijon and apple butter spread and viola, the makings of a great burger.

    Of course, there’s cheese too. Glorious, creamy, rich brie to be exact. And how fun is this?!–I found these amazingly cute 1-ounce mini brie circles. I mean, how cool is this?:

    The perfect serving size AND they fit nicely on top of the burger. Brilliant! (of course, you’ll have to slice a 1-ounce size piece of brie from a standard block of cheese if you can’t find these—which isn’t all bad because, you know, leftovers).

    Not much else to say about this one … except…YUM!

    Brie and Apple Turkey Burger

    servings: 2 | time: about 20 minutes

    ingredients:

    For the sauce:
    3 tsp. Dijon mustard
    2 tsp. apple butter

    For the burgers:
    1 TBSP. olive oil
    1 medium apple such as pink lady, braeburn or other really crisp apple), cored, peeled and diced
    1 shallot, diced
    1 tsp. each dried rosemary & thyme
    1/2 pound ground turkey or chicken breast
    a couple generous pinches of salt
    1/4 tsp pepper 2 ounces brie cheese (cut into 2 1-ounce servings)

    directions:

    Make the burger sauce:
    1. Place ingredients in a bowl and stir to combine. Set aside while you make the burgers

    For the burgers:
    1. Heat the olive oil in a non stick pan over medium high heat
    2. Add the apples and shallot and saute for 3-4 minutes, just until the shallots start to brown
    3. Add the rosemary and thyme and saute for 1 minute. Remove from heat
    4. Place the ground turkey or chicken in a large bowl. Season with salt and pepper and add the sauteed apples. Using your hands, combine until the apple mixture is well incorporated
    5. Make 2 burgers and place in the same saute pan you used for the apples. Allow burgers to cook over medium heat for about 5 minutes until deeply golden brown. Flip burger and cook for another 4-5 minutes
    6. Once they are deep golden brown on the other side, flip burgers once again and top with the brie. Allow to cook for one minute more (if you’re feeling ambitious you could pop them under the broiler for a couple of minutes to get the cheese really melty)
    7. Place on buns and top with the Dijon apple spread. YUM!
